INGREDIENTS
1 1/2 pounds boneless pork shoulder
9 ounces pappardelle pasta or any long flat egg noodle
1/4 cup red miso paste
1/4 tsp crushed red pepper flakes
3 TBSP plus 3 TBSP peanut oil

DIRECTIONS
Cut the pork into thinly sliced bite-size pieces then set aside.
Cook the noodles according to package directions then drain the linguini reserving a 1/4-cup of the pasta water.
Mix the reserved pasta water with the miso paste and crushed red pepper then set aside.
Heat 3 TBSP of the oil in a large wok over high heat.
Add HALF the sliced pork to the pan and stir-fry for 3 to 4 minutes or until no longer pink.
Transfer the fried pork to a plate and set aside then wipe out the wok, add 3 more TBSP of oil to the wok and cook the remaining pork the same way.
Return all the pork to the wok then stir in the miso sauce and cook while stirring until the sauce begins to thicken a bit, 1 to 2 minutes.
Take the wok off the heat then stir in the cooked noodles and serve.
