Drain the pickles, lay the pickles on paper towels and then pat them dry.
Preheat your oven to broil. Line a baking sheet with foil and top with a wire rack.
In a large bowl whisk together the eggs, Sriracha, flour, garlic powder, and salt to make a thick batter.
In another large shallow bowl spread out the breadcrumbs.
Using a pair of tongs dip each pickle slice into the batter and turn to coat. Shake off any excess batter and then place in the breadcrumbs and turn to coat then lay on the wire rack.
Broil the pickles for 4 minutes then flip and broil 3 to 4 more minutes.
Mix the mayonnaise and dijon together in a bowl and serve with the pickle chips.
