These are a cross between German Sauerkraut balls and meatballs, served with an apple horseradish mustard sauce.

INGREDIENTS
Sauerkraut Balls:
1/2 lb ground pork
1/2 tsp dried sage, chopped
1/8 tsp dried thyme
1/4 tsp ground black pepper
1/2 tsp salt
1/8 tsp red pepper flakes
1/8 tsp ground nutmeg
1/8 tsp mustard powder
1/8 tsp granulated onion
1/8 tsp granulated garlic
1 14-ounce can sauerkraut, well drained and lightly chopped
1 large egg
Apple Mustard Sauce:
1/2 cup mayonnaise
2 TBSP heavy cream
1/2 green apple, shredded
1 TBSP grain mustard
1 TBSP prepared horseradish
1 tsp Dijon mustard
1 tsp honey
CONVERSION CALCULATOR
DIRECTIONS
Preheat oven to 400 degrees F. Lightly grease a rimmed baking sheet or line with a silicone mat.
Mix together all the sauerkraut ball ingredients.
Form into 1 inch balls. Bake for 20 minutes, or until browned.
In the meantime prepare the sauce: In a small bowl combine all of the Apple Mustard Sauce ingredients.
Place the Sauerkraut balls on a serving platter or plate. Serve with the sauce.
