- 2/3 cup whole milk
- 1/2 tsp salt
- 1/3 cup peanut oil
- 1/2 cup shredded Parmesan cheese
- 1 1/2 cups tapioca flour

Directions
- Preheat the oven to 350 degrees F.
- In a medium bowl whisk together egg, milk, salt, and oil until well blended.
- Add the Parmesan cheese and tapioca flour and whisk together.
- Fill 24 mini muffin cups with the mix. Each cup should be about 2/3 full.
- Place in the center of the oven and bake for 20-25 minutes until golden brown.
