Ingredients

1 pork tenderloin, trimmed
Chimichurri sauce:
1 cup olive oil
1/4 cup red wine vinegar
2 TBSP crushed garlic
1/2 cup parsley leaves, chopped fine
1/2 cup cilantro leaves, chopped fine
1/4 tsp black pepper
1/4 tsp red pepper flakes
1 tsp kosher salt

Directions

1. Heat the oven to 400 degrees F. Pat the pork tenderloin dry and place in a bowl.

2. Whisk all the ingredients for the chimichurri sauce together. Pour 1/4 cup of the marinade over the pork and allow it to marinate for 10 minutes. Save the remaining chimichurri as a dipping sauce.

3. Heat an oven proof skillet over medium-high heat. Add the pork and sear on all sides. Put the pan in the oven and cook for about 8 minutes or until the internal temperature of the thickest part of the pork reaches 145 degrees F.

4. Allow the pork to rest 10 minutes and then slice and serve wih the reserved chimichurri sauce.
