A creamy polenta in about 10 minutes, made with yellow cornmeal, milk, butter, and Parmesan cheese.

INGREDIENTS

  • 1 cup water
  • 3 cups whole milk
  • 1 cup yellow cornmeal
  • 1/4 tsp salt
  • 1/4 tsp fresh ground pepper
  • 4 TBSP unsalted butter
  • 3/4 cup grated Parmesan cheese



DIRECTIONS

  1. Stir together the water, milk, cornmeal, salt, and pepper in a medium-size saucepan over medium-high heat and bring to a boil, stirring often.
  2. When it begins to boil reduce the heat to low then continue stirring until it begins to thicken, 2 to 3 minutes.
  3. Take off the heat then stir in the butter and Parmesan until well combined.
  4. Season with additional salt & pepper if needed.
