1 red bell pepper, seeded, stemmed and cut into 2-inch pieces
2 TBSP olive oil
1/2 tsp garlic powder
salt & freshly ground black pepper
MEATBALLS:
1/2 cup panko breadcrumbs
1/4 cup whole milk
1 large egg, lightly beaten
1 pound ground turkey
1 TBSP curry powder
1/2 tsp salt
1/4 tsp pepper
DIRECTIONS
Preheat the oven to 425°F.
Add all the vegetables, oil, garlic, 1/2 tsp salt, and 1/4 tsp black pepper to a large mixing bowl and stir to coat the vegetables evenly.
Spread the vegetables on a large rimmed baking sheet and bake in the preheated oven for 30 minutes, flipping the vegetables over halfway through.
Mix the breadcrumbs, milk, and egg together in the now empty mixing bowl.
Use your hands to mix in the ground turkey, curry powder, salt, and pepper then form the mixture into balls roughly 2-inches in diameter and set aside.
Take the veggies out of the oven and nestle in the meatballs then place the baking sheet back in the oven and bake for 12 to 14 more minutes or until the meatballs are cooked through and veggies are tender.
