Curry Spiced Chicken Drumsticks
Oven baked chicken legs seasoned with a homemade curry spice.

Ingredients
- 12 chicken drumsticks (3 to 4 pounds)
- 3 TBSP olive oil
- 2 tsp salt
- 1 tsp ground black pepper
- 1 tsp ground cumin
- 1/2 tsp granulated garlic
- 1/2 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground coriander
- 1/4 tsp turmeric

Directions
- Preheat the oven to 425°F. Place a wire baking rack on top of a rimmed baking sheet and set aside.
- Pat the chicken drumsticks dry with paper towels then place them in a large bowl and drizzle the olive oil on top. Toss the chicken to coat evenly in the oil and set aside.
- In a small bowl mix together all the spices (salt, pepper, cumin, garlic, ginger, cinnamon, coriander, and turmeric).
- Sprinkle the spice mixture on the chicken and toss to combine and evenly coat the chicken in the spice mixture.
- Place the chicken drumsticks in a single layer on the wire rack at least 1-inch apart.
- Bake in the preheated oven for 35 to 40 minutes or until chicken is cooked through (165°F).
