Add the potatoes into a large bowl. Drizzle 2 TBSP of the olive oil over top then sprinkle on the parsley, 1 tsp salt, and 1/4 tsp black pepper. Toss together to coat.
Spread the potatoes onto a large rimmed baking sheet and place in the preheated oven for 20 minutes.
Put the onion, bell pepper, and broccoli into the empty bowl that the potatoes were in and drizzle on 1 TBSP of olive then toss to coat and set aside.
Add all the meatball ingredients into a separate large bowl and use your hands to mix together until well combined.
Form the turkey mixture into balls roughly 1 to 1-1/2 inches in diameter then place the meatballs on a plate and set aside.
After the potatoes have cooked for 20 minutes take them out of the oven. Stir the onion, bell pepper, and broccoli in with the potatoes then spread the meatballs out onto the baking sheet.
Return the baking sheet to the oven and bake until the meatballs are cooked through and the potatoes are tender, 15 to 20 more minutes.
Stir everything one more time then season with additional salt & pepper if necessary.
