Thoroughly rinse the black beans under cold water then add them to a medium-size saucepan along with garlic, onion, cumin, bay leaf, 1/2 tsp salt, 1/4 tsp black pepper, and 4 cups of water.
Bring to a boil over high heat.
When the water begins boiling reduce the heat to medium-low and simmer, stirring occasionally, for about 1 hour and 30 minutes.
Taste test the beans and if theyre not tender continue to simmer them. If needed, add a little more water to keep the beans completely covered in liquid, then taste test the beans every 15 minutes or so, until they are tender. It may take up to another hour for the beans to become tender.
When the beans are tender, increase the heat to medium and cook, stirring often, until thickened, about 15 more minutes.
Take the beans off the heat then remove the bay leaf and discard.
Season the beans with additional salt & pepper to taste.
