INGREDIENTS

  • 2 TBSP olive oil
  • 12 ounces fresh green beans, trimmed and cut into 2-inch pieces
  • 2 cups fresh corn kernels
  • 1 medium-size yellow squash, ends trimmed and halved lengthwise then cut into 1/4-inch thick slices
  • 2 medium garlic cloves, minced
  • salt & freshly ground black pepper



DIRECTIONS

  1. Heat the oil in a large saute pan over medium-high heat.
  2. Add the green beans, corn, and squash to the pan and cook, stirring occasionally, for about 5 minutes.
  3. Stir in the garlic, 1/2 tsp salt, and 1/4 tsp black pepper then continue to cook, stirring occasionally, until vegetables are just tender, 2 to 3 more minutes.
  4. Season with additional salt & pepper to taste.
