A simple version of the Native American side dish, consisting of fresh corn, squash, and green beans sauteed in olive oil with garlic, salt, and pepper.
12 ounces fresh green beans, trimmed and cut into 2-inch pieces
2 cups fresh corn kernels
1 medium-size yellow squash, ends trimmed and halved lengthwise then cut into 1/4-inch thick slices
2 medium garlic cloves, minced
salt & freshly ground black pepper
DIRECTIONS
Heat the oil in a large saute pan over medium-high heat.
Add the green beans, corn, and squash to the pan and cook, stirring occasionally, for about 5 minutes.
Stir in the garlic, 1/2 tsp salt, and 1/4 tsp black pepper then continue to cook, stirring occasionally, until vegetables are just tender, 2 to 3 more minutes.
