INGREDIENTS
2 tsp salt
2 tsp garlic powder
1 tsp freshly ground black pepper
3 1/2 pound boneless beef chuck roast
1 TBSP olive oil
1 large yellow onion, diced
1/4 cup soy sauce
1 tsp dried thyme
1 tsp dried rosemary
FOR SERVING:
8 8
French sandwich rolls
8 slices provolone cheese

DIRECTIONS
In a small bowl mix together the salt, garlic, and black pepper.
Pat the beef dry with paper towels then rub the seasoning mix all over the beef roast and set aside.
Heat the oil in a large saute pan over medium-high heat.
When the oil is hot, sear the beef until well browned, about 4 minutes per side.
Transfer the seared beef to a large slow cooker and set aside.
Add the onion, soy sauce, thyme, and rosemary to the pan then use a wooden spoon to scrape any stuck on bits of beef off the bottom of the pan.
Transfer the contents of the pan into the slow cooker over top of the beef.
Place the lid on the slow cooker and cook, on LOW heat, for about 8 hours or until the beef is tender.
Transfer the beef to a cutting board and slice the beef or pull the beef apart using two forks.
Taste the liquid in the slow cooker and add salt & pepper if needed then transfer the liquid to a glass measuring cup or gravy boat for easy pouring.
Toast your sandwich rolls then load them up with beef and provolone cheese.
Pour The au jus sauce into small bowls and serve with the sandwiches for dipping.
