In a small bowl mix together the garlic, onion, smoked paprika, salt, and pepper until well combined.
Pat the pork dry with paper towels then rub the seasoning mix evenly all over the pork.
Heat the oil in a large saute pan over medium-high until hot.
When the oil is hot sear the pork until well browned on all sides, 3 to 4 minutes per side.
Transfer the pork to a large slow cooker and set aside.
Keep the pan over medium-high heat then spread the pineapple chunks out in the pan and cook, stirring occasionally, until the pineapple is browned and caramelized, 10 to 12 minutes.
Stir the soy sauce, water, and crushed red pepper in with the pineapple then use a wooden spoon to scrape the bottom of the pan to release any stuck on bits.
Transfer the contents of the pan into the slow cooker over top of the pork.
Place the lid on the slow cooker and cook, on LOW, until the pork is fall-off-the-bone tender, about 7 hours.
Use two forks to shred the pork, discarding the bone, then taste and season with additional salt & pepper, if needed.
