Directions
- Preheat oven to 250°F.
- In a small bowl mix together the oil, garlic powder, salt, and pepper.
- Rub the pork all over with the seasoning mix.
- Place the pork skin side up in a dutch oven and cover with a lid. Roast in the pork in the preheated oven for 6 hours.
- After 6 hours remove the lid from the dutch oven and turn the oven temperature up to 450°F.
- Roast, uncovered, for 1 more hour, or until the skin is crispy.
- Take out of the oven and allow to rest for 30 minutes before serving.

Very good but just a little too salty for my tastes. I think I would cut the salt in half and double the garlic powder next time.
