Small Crusty Bread
A small simple crusty bread loaf that goes great with soups and stews.

Ingredients
- 2/3 cup warm water
- 1 packet (1/4 ounce or 2 1/4 tsp) active dry yeast
- 1 cup whole wheat flour
- 1 cup bread flour
- 1 tsp salt
Directions
- Mix the water and yeast together in a large mixing bowl.
- Mix in the flours and salt then knead the bread by hand in the bowl for about 5 minutes.
- Loosely cover the bowl and let sit for about 2 hours.
- Form the dough into a ball and place on a piece of parchent paper then use a serrated knife to cut 3 shallow slits on the top of the dough and set aside.
- Place a dutch oven, without the lid, into the oven and preheat the oven to 475°F. Allow the dutch oven to get hot in the oven for at least 20 minutes.
- After the dutch oven has been heating up for 20 minutes take it out of the oven.
- Carefully lower the dough ball with the parchment paper into the dutch oven then place the lid on the dutch oven.
- Place the dutch oven back in the oven and reduce then oven temperature to 425°F then bake the bread for 25 minutes.
- Take the lid off the dutch oven and continue to bake the bread for 10 more minutes.
