INGREDIENTS
1/4 cup olive oil
1 TBSP Dijon mustard
1/2 tsp soy sauce
1 tsp capers, finely chopped
1 medium garlic clove, minced
freshly ground black pepper
7 ounces romaine lettuce leaves, chopped
1 cup chopped cooked turkey
2 TBSP plus 2 TBSP freshly grated Parmesan cheese
1/3 cup thinly sliced almonds
CONVERSION CALCULATOR
DIRECTIONS
In a large mixing bowl stir together the olive oil, Dijon, soy sauce, capers, garlic, and 1/8 tsp black pepper until well combined.
Add the chopped romaine, turkey, and 2 TBSP of the Parmesan into the bowl and toss with the dressing until mixed well.
Transfer the salad to a serving bowl then sprinkle the remaining 2 TBSP of Parmesan and the sliced almonds on top.
