Almond Caesar Salad
A Caesar salad made with a vegetarian Caesar dressing and topped with slivered almonds for a little crunch.

Ingredients
- 1/4 cup olive oil
- 2 cloves of garlic, minced
- 1 tsp soy sauce
- 1 tsp capers, crushed and chopped
- 2 TBSP lemon juice
- 1/2 cup slivered almonds
- 1/2 cup freshly shredded Parmesan cheese
- 2 romaine hearts, chopped
- salt & freshly ground pepper
Directions
- In a large mixing bowl whisk together the olive oil, garlic, soy sauce, capers, lemon juice, HALF (1/4 cup) of the almonds, and HALF (1/4 cup) of the Parmesan until thoroughly combined. Season with salt & pepper to taste.
- Add the romaine to the bowl and toss to coat. Transfer the salad to a large serving bowl and sprinkle the remaining almonds and Parmesan on top.
