INGREDIENTS
2 TBSP olive oil
1 cup uncooked jasmine rice
1 small yellow onion, diced
1 tsp turmeric
1 tsp garlic powder
1 tsp ground cumin
salt & freshly ground black pepper
1 1/2 cups water

DIRECTIONS
Heat the oil in a medium-size saucepan over medium-high heat.
Add the rice and onion to the pan and cook, stirring often, for 1 minute.
Stir in the turmeric, garlic, cumin, 1/2 tsp salt, and 1/2 tsp black pepper until well combined.
Stir in the water and bring to a slight boil.
Reduce the heat to low then place a lid on the pan and simmer over low heat for 10 minutes, without removing the lid.
Turn off the heat and let the rice sit on the stove, keeping the lid on, for 20 more minutes.
Remove the lid and fluff the rice with a fork then taste and season with salt & pepper if needed.
