Parsley- Caper Vinaigrette

Ingredients
- 2 TBSP Red wine vinegar
- 1 tsp chopped garlic, about 2 cloves
- 1 medium shallot, separated (1 TBSP Chopped, 1 tsp minced)
- 2 tsp Dijon mustard
- 1/2 tsp Kosher salt
- 1/8 tsp black pepper
- 1/2 cup oil
- 3 TBSP Capers
- 1/4 cup fresh chopped flat leaf parsley
Directions
- Put vinegar, garlic, 1 TBSP chopped shallot, Dijon, salt, pepper in a glass 1 cup measuring cup.
- Put a stick blender in and turn on, with the motor running slowly drizzle in the oil.
- Add the minced shallot, capers and parsley and stir together.
- Add a bit of water to thin if needed
- Serve
