Pound the chicken breasts into and even thickness of about 1/2-inch to 3/4-inch thick.
Combine the pickle juice and 1/2 cup of the milk in a bowl then add the chicken breasts and allow to marinate in the fridge for 1 hour.
Whisk together the egg and the 1 TBSP milk in a shallow bowl then set aside.
In a separate shallow bowl combine the flour, powdered sugar, and black pepper.
Remove the chicken from the marinade then pat the chicken dry with paper towels.
Heat the oil in a dutch oven or large saute pan over medium heat until very hot, about 350°F.
Dredge the chicken in the flour mix, then the egg mix, then back into the flour mix. Shake off any excess then carefully add the chicken to the hot oil. Repeat with the second piece of chicken.
Fry the chicken for about 4 minutes per side or until each side is brown and crispy and the chicken is cooked through.
Toast the buns then serve the chicken in between the buns with mayo and pickles.
