INGREDIENTS

  • 4 TBSP unsalted butter
  • 12 ounces frozen spinach, thawed and drained
  • 1 cup diced onion
  • 1 medium garlic clove, minced
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 large eggs
  • 1 cup whole milk
  • 8 ounces Monterey Jack cheese, shredded



DIRECTIONS

  1. Preheat the oven to 375°F.
  2. Add the butter, spinach, onion, and garlic to a medium-size saucepan over medium-high heat and cook, stirring occasionally, until most of the liquid in the pan has evaporated, about 5 minutes.
  3. Transfer the spinach mixture to a large mixing bowl then stir in the flout, salt, and baking powder.
  4. Now stir in the eggs, milk, and cheese until everything is well combined.
  5. Spread the mixture into a 9x13-inch baking dish evenly then bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Take it out of the oven and allow it to cool for about 15 minutes before cutting and serving.

These were exactly what I was looking for! I wanted to use a white cheese and all others used different cheeses and ingredients. I even made the mistake of not reading the instructions first and just put all the ingredients together and they were still so good! I did use cooked frozen spinach so I'm sure if I used fresh, that would not have worked! Thanks for the recipie:)
