INGREDIENTS
1 1/2 lbs Yukon gold potatoes
2 ounces sharp cheddar cheese, finely shredded
1/4 cup milk
6 TBSP unsalted butter, softened
2 TBSP diced jalapenos
salt & pepper

DIRECTIONS
Peel potatoes and cut into 1 inch pieces. Place in a pot and cover with water about an inch above potatoes and add 1 tsp salt.
Bring to a boil over medium high heat. Reduce heat to medium and cook until tender about 20 minutes.
Drain potatoes and return to pot. Add butter and milk and mash potatoes with a masher until no lumps remain.
Add cheese and jalapenos and stir. Add salt and pepper to taste.
