Mango Fruit Salad with Chili-Lime Dressing
Mangoes, Granny Smith apples, and toasted cashews tossed with a chili-lime dressing.

Ingredients
- 2 ripe mangoes, peeled, pitted, and 1/2-inch diced
- 1 Granny Smith apple, peeled, cored, and 1/2-inch diced
- 1/2 cup cashews
- Chili-Lime Dressing:
- 1 TBSP olive oil
- 1 TBSP fresh lime juice
- 1/8 tsp salt
- 1/2 tsp chili powder
Directions
- Toast the cashews in a dry skillet over medium heat while constantly stirring until lightly browned, 1 to 2 minutes. Take the pan off the heat and transfer cashews to a large mixing bowl.
- Add the mango and apple to the bowl with the cashews.
- Add the dressing ingredients to a small jar with a tight fitting lid and shake well to combine.
- Pour the dressing over mango and apples and toss to combine.
