INGREDIENTS
2 TBSP olive oil
6 ounces of crusty bread, cubed
1 small yellow onion, diced
2 bulbs of garlic, peeled and minced
salt & freshly ground black pepper
1 TBSP smoked paprika
5 cups water
2 large eggs, beaten
freshly chopped parsley for garnish
CONVERSION CALCULATOR
DIRECTIONS
Heat the oil in a Dutch oven or large pot over medium-high heat.
Add the cubed bread and cook, stirring often, until bread in lightly browned, about 5 minutes.
Add the onion, garlic, paprika, 1 tsp salt, and 1/4 tsp black pepper and cook, stirring often, until onion begins to soften, about 2 minutes.
Stir in the water then bring to a boil.
Reduce the heat to low then cover and simmer for 15 minutes, stirring occasionally.
Take the soup off the heat and slowly pour in the beaten eggs as you stir.
Season the soup with salt and pepper to taste.
Ladle the soup into bowls and garnish with freshly chopped parsley.
