Strawberry Cucumber Salad with Feta
Crisp, sweet and perfect for a hot summer night as a meal or side dish.

Ingredients
- 1/2 pound little cucumbers
- salt
- 12 oz strawberries, sliced into rounds
- 2 oz feta cheese, crumbled (see notes)
- 1 TBSP white balsamic vinegar (see notes)
- 2 tsp honey
Directions
- Peel the cucumber lengthwise creating stripes. Cut in half lengthwise and then into bite size slices. Put into a strainer and sprinkle with salt. Let sit 10 minutes.
- Put the strawberries, vinegar, honey and cucumbers in a bowl and toss together.
- Serve immediately or store in fridge for up to 6 hours before serving.
