If using frozen corn just rinse and drain the corn under cold water until thawed. If using fresh corn then boil the corn for 3 minutes then remove the kernels.
In a large bowl stir together the corn, jalapeno, bell pepper, and onion.
Drizzle on the olive oil and vinegar then sprinkle on the cumin, 1/2 tsp salt, and 1/4 tsp black pepper. Mix until well combined.
Taste and season with additional salt & pepper, if needed the sprinkle the feta cheese on top.
