Blackened Cajun Turkey Meatballs

Ingredients
Binder:
1/2 slice white bread
1 egg, lightly beaten
1/4 tsp granulated garlic
1/4 tsp granulated onion
2 TBSP pickled jalapenos, diced
1 tsp Cajun seasoning
2 tsp Dijon mustard
1 tsp soy sauce
1 package gelatin
1 lb ground turkey
olive oil spray
2 TBSP Cajun seasoning
Directions
1. Make a paste with all the binder ingredients.
2. Add in the turkey and mix thoroughly.
3. Form around 14 balls and refrigerate at least 1 hour.
4. Sprinkle with Cajun seasoning and spritz with oil.
5. Heat a cast iron pan over medium high and add the meatballs. Turn often to cook evenly. Until they reach 165 degrees internal temperature and are well blackened on the outside. Add a little more oil if needed.
6. Serve with picks.
