Brussels Sprouts Gratin

Ingredients
2 pounds brussels sprouts, trimmed and halved
2 TBSP olive oil
1 shallot, finely chopped
1 garlic clove, minced
1/4 tsp crushed red pepper flakes
salt & pepper
1 cup heavy cream
1 cup freshly grated Parmesan cheese
1 cup panko breadcrumbs
3 TBSP unsalted butter, melted
Directions
1. Preheat oven to 425°F.
2. Add the brussels sprouts, oil, shallot, garlic, red pepper flakes, and 1/2 tsp salt to a bowl and toss to combine. Spread the sprouts out in a 9x13 baking dish and bake for 20 minutes.
3. Take the baking dish out of the oven and add the heavy cream, stir to combine with the brussels sprouts. Sprinkle the Parmesan cheese evenly on top then mix the breadcrumbs and melted butter in a bowl and sprinkle that on top of the Parmesan.
4. Bake until bubbly and lightly browned on top, about 8 more minutes.
