Crispy Portabella Fries
Sliced portabella mushrooms breaded with Parmesan Cheese and Panko crumbs then baked in the oven.

Ingredients
- 3 medium portabella, cleaned & sliced
- salt & pepper
- 1/4 cup corn starch
- 1 large egg
- 1 TBSP mayonnaise
- 1 cup panko
- 1/4 cup Parmesan cheese
- 1/2 tsp granulated garlic
- 1 TBSP olive oil
Directions
- Heat the oven to 425 degrees F.
- In a pie plate combine 1 tsp salt, 1/4 tsp pepper and the cornstarch.
- In a second pie plate whisk together the egg and the mayo.
- In a third pie plate combine 1/2 tsp salt, 1/4 tsp pepper, panko, cheese, garlic, and oil.
- Bread the slices of portabella by first dipping into cornstarch, then the egg, and finally thoroughly coating with the breadcrumb mixture.
- Lay the breaded mushrooms in a single layer on a baking sheet lined with a wire rack.
- Bake for 20 minutes, serve immediately.
