Quinoa Tabouli Salad
Quinoa, veggies, and herbs make up this light, and delicious salad.

Ingredients
- 1/2 cup uncooked quinoa
- 1/2 tsp kosher salt
- 1/2 cup cucumber, small dice
- 1/2 cup tomatoes, small dice
- 1/4 cup red onions, small dice
- 1/2 cup parsley, chopped
- 2 TBSP chopped cilantro
- 1 TBSP lemon juice
- 1 TBSP olive oil

Directions
- Put the quinoa and 1 cup water in a pot and bring to a boil. Cover and turn to a low simmer for 15 minutes. Chill for 30 minutes.
- Mix the quinoa and remaining ingredients in a bowl and serve or refrigerate for up to 48 hours.
