Add the ground beef and onion to a dutch oven or large saute pan over medium-high heat and cook while breaking up the beef, until the beef is browned, about 6 minutes.
Stir the water, paprika, garlic, cumin, cayenne, oregano, 1 tsp salt, and 1/4 tsp black pepper in with the beef and bring to a slight boil.
Reduce the heat to medium-low and simmer the beef, stirring occasionally, until most of the liquid has evaporated, about 10 more minutes.
Take the beef off the heat then season with salt & pepper to taste.
Preheat the oven to 325°F.
Place your taco shells open-side down onto a baking sheet then bake them until heated through, 4 to 6 minutes.
Fill your taco shells with the beef, cheese, lettuce and any other of your favorite taco toppings.
