INGREDIENTS
3 pounds bone-in chicken thighs, skin removed
2 tsp ground cumin
2 tsp paprika
1 tsp garlic powder
1/4 tsp cayenne pepper
salt & freshly ground black pepper
10 6-inch whole wheat flour tortillas
2 cups shredded iceberg lettuce
1 jalapeno, thinly sliced
2 roma tomatoes, diced
5 ounces
queso fresco
, crumbled

DIRECTIONS
Spread the chicken thighs out in a large 6-quart slow cooker.
In a small bowl mix together the cumin, paprika, garlic, cayenne, and 1 tsp salt then sprinkle into the slow cooker over the chicken thighs.
Place a lid on the slow cooker and cook on LOW for about 6 hours or until the chicken is cooked through and tender.
Transfer the chicken thighs to a plate, reserving the liquid in the slow cooker, then shred the chicken and discard the bones.
Place the shredded chicken into the slow cooker with the liquid and stir to combine then taste and season with additional salt & pepper if needed.
Warm the tortillas then serve topped with the chicken, lettuce, jalapeno, tomatoes, and queso fresco.
