Add the ground beef and onion to a large saute pan over medium-high heat and cook, stirring often while breaking up the beef, until the beef is browned, about 6 minutes.
Stir in the lentils, water, paprika, garlic, cumin, oregano, 1 tsp salt, and 1/4 tsp black pepper then bring to a boil.
Place a lid on the pan then reduce the heat to medium-low and simmer, stirring occasionally, until the lentils are tender, about 30 minutes.
Remove the lid and continue to simmer, stirring often, until most of the liquid in the pan has been absorbed, about 5 more minutes.
Taste and season with additional salt & pepper, if needed.
Fill your taco shells with the beef-lentil mixture and any optional toppings.
