Combine the chicken, olive oil, salt, and pepper in a large bowl and toss to coat evenly. Set aside
Combine the AVOCADO SAUCE ingredients in a food processor and blend until smooth. Scrape into a bowl and set aside.
In another large bowl mix together the GREEK SALAD MIX ingredients together and set aside.
Heat a large skillet over medium heat. Add the chicken to the hot pan and cook, stirring occasionally, until all the chicken is cooked through, about 10 minutes.
Add the chicken, Greek salad mix, and avocado sauce to warmed tortillas and enjoy.
