INGREDIENTS

  • 1 cup dried black beans, rinsed thoroughly
  • 2 medium garlic cloves, peeled
  • 1 jalapeno, roughly chopped
  • 1/4 cup diced red onion
  • 1/2 cup fresh cilantro
  • 1 tsp ground cumin
  • juice of 1 small lime
  • salt
  • tortilla chips for serving



DIRECTIONS

  1. Place the beans and about 6 cups of water in a large saucepan over medium-high heat and bring to a boil.
  2. Cover the pan and reduce the heat to medium-low, simmer until beans are very tender, about 1 hour and 15 minutes.
  3. Drain the beans then place them in a food processor or blender along with the garlic, jalapeno, onion, cilantro, cumin, lime juice, 1 tsp salt, and 1/4 cup water.
  4. Blend until smooth then transfer to a serving bowl and season with additional salt if needed.
  5. Serve with tortilla chips
