INGREDIENTS
1 1/2 pounds baby gold potatoes, quartered
salt & freshly ground pepper
1/2 cup diced dill pickles
1/2 cup diced red onion
1 TBSP freshly minced dill
1 TBSP whole grain Dijon mustard
1/2 cup mayonnaise
CONVERSION CALCULATOR
DIRECTIONS
Place the potatoes in a pot and cover with water then stir in 1/4 tsp salt and bring to a boil over medium-high heat.
Boil potatoes until tender, about 10 minutes.
Drain the potatoes then set aside to cool for about 10 minutes.
In a large bowl mix together the pickles, onion, dill, mustard, mayonnaise, 1/8 tsp salt, and 1/8 tsp black pepper.
Add the cooled potatoes to the bowl and mix until well combined.
Taste and season with additional salt & pepper as needed then cover and refrigerate until ready to serve.
