Fresh Dill Potato Salad
Tender baby gold potatoes mixed with fresh dill, dill pickles, red onion, Dijon mustard and mayo.

- 1 1/2 pounds baby gold potatoes, quartered
- salt & freshly ground pepper
- 1/2 cup diced dill pickles
- 1/2 cup diced red onion
- 1 TBSP freshly minced dill
- 1 TBSP whole grain Dijon mustard
- 1/2 cup mayonnaise

Directions
- Place the potatoes in a pot and cover with water then stir in 1/4 tsp salt and bring to a boil over medium-high heat.
- Boil potatoes until tender, about 10 minutes.
- Drain the potatoes then set aside to cool for about 10 minutes.
- In a large bowl mix together the pickles, onion, dill, mustard, mayonnaise, 1/8 tsp salt, and 1/8 tsp black pepper.
- Add the cooled potatoes to the bowl and mix until well combined.
- Taste and season with additional salt & pepper as needed then cover and refrigerate until ready to serve.
