Tender baby gold potatoes mixed with fresh dill, dill pickles, red onion, Dijon mustard and mayo.

Fresh Dill Potato Salad recipe

Ingredients

  • 1 1/2 pounds baby gold potatoes, quartered
  • salt & freshly ground pepper
  • 1/2 cup diced dill pickles
  • 1/2 cup diced red onion
  • 1 TBSP freshly minced dill
  • 1 TBSP whole grain Dijon mustard
  • 1/2 cup mayonnaise

Directions

  1. Place the potatoes in a pot and cover with water then stir in 1/4 tsp salt and bring to a boil over medium-high heat.

  2. Boil potatoes until tender, about 10 minutes.

  3. Drain the potatoes then set aside to cool for about 10 minutes.

  4. In a large bowl mix together the pickles, onion, dill, mustard, mayonnaise, 1/8 tsp salt, and 1/8 tsp black pepper.

  5. Add the cooled potatoes to the bowl and mix until well combined.

  6. Taste and season with additional salt & pepper as needed then cover and refrigerate until ready to serve.
