INGREDIENTS

  • 2 TBSP olive oil
  • 1 cup uncooked quinoa, rinsed thoroughly
  • 1/2 cup diced yellow onion
  • 2 medium garlic cloves, minced
  • 1 3/4 cups water
  • salt & freshly ground black pepper
  • 1 TBSP freshly squeezed lemon juice



DIRECTIONS

  1. Heat the oil in a medium-size saucepan over medium-high heat.
  2. Lightly toast the quinoa in the pan, while stirring, for about 30 seconds.
  3. Add the onion to the pan and cook, while stirring, for about 30 seconds.
  4. Stir in the garlic and cook until garlic is fragrant, about 10 seconds.
  5. Stir in the water, 1/2 tsp salt, and 1/4 tsp black pepper until well combined and the water just begins to boil.
  6. Place a lid on the pan then reduce the heat to low and simmer for 15 minutes, without removing the lid.
  7. Turn off the heat and let the pan sit on the stovetop, still keeping the lid on, for about 20 more minutes.
  8. Remove the lid and fluff the quinoa with a fork.
  9. Gently stir in the fresh lemon juice then season with salt & pepper to taste.
