Garlic and Herb Quinoa
A simple quinoa side dish made with fresh garlic and herbs.

- 1 TBSP unsalted butter
- 1 cup quinoa, rinsed thoroughly
- 2 garlic cloves, minced
- 2 cups water
- salt & freshly cracked pepper
- 1/4 cup freshly chopped parsley
- 1 TBSP freshly chopped chives

Directions
- Melt the butter in a medium size saucepan over medium heat. Add the quinoa and cook, stirring often, for 2 minutes. Add the garlic and cook while stirring for about 10 seconds. Add the water, 1/2 tsp salt, and 1/4 tsp pepper and bring to a boil.
- Reduce heat to medium-low and simmer, gently stirring occasionally, about 20 minutes or until all the liquid has been absorbed.
- Take the pan off the heat and let sit for 10 minutes.
- Gently stir in the parsley and chives then season with salt & pepper to taste.
