Garlic and Herb Quinoa

A simple quinoa side dish made with fresh garlic and herbs.

Garlic and Herb Quinoa recipe

Ingredients

  • 1 TBSP unsalted butter
  • 1 cup quinoa, rinsed thoroughly
  • 2 garlic cloves, minced
  • 2 cups water
  • salt & freshly cracked pepper
  • 1/4 cup freshly chopped parsley
  • 1 TBSP freshly chopped chives



Directions

  1. Melt the butter in a medium size saucepan over medium heat. Add the quinoa and cook, stirring often, for 2 minutes. Add the garlic and cook while stirring for about 10 seconds. Add the water, 1/2 tsp salt, and 1/4 tsp pepper and bring to a boil.

  2. Reduce heat to medium-low and simmer, gently stirring occasionally, about 20 minutes or until all the liquid has been absorbed.

  3. Take the pan off the heat and let sit for 10 minutes.

  4. Gently stir in the parsley and chives then season with salt & pepper to taste.
