Cook the onions and turkey in a large pan over medium heat, breaking up turkey into small pieces, about 4 minutes. Stir in garlic and cook 30 seconds or until fragrant.
Add the water, salt, pepper, cumin and chili powder and cook until liquid has evaporated, 10 to 15 minutes.
Take off the heat and stir in the cilantro and lime juice. Fill warmed tortillas with the turkey, cheese, lettuce and any other of your favorite toppings.
