INGREDIENTS

  • 3 pounds fresh roma tomatoes, roughly chopped
  • 1/2 tsp salt



DIRECTIONS

  1. Place the chopped tomatoes and salt into a large pot over medium-high heat.
  2. Cook the tomatoes, using a spatula to break up the tomatoes, until the liquid in the pot begins to boil rapidly.
  3. Reduce the heat to medium and simmer, occasionally breaking up the tomatoes, for about 5 minutes.
  4. Transfer the contents of the pot to a blender or use an immersion blender and blend well.
  5. Pour the blended tomatoes through a colander over a container then gently stir the blended tomatoes while in the colander to filter out any seeds and skin.
  6. makes about 32 ounces (4 cups) of tomato puree.
