INGREDIENTS
4 cups fresh baby kale
1 gala apple, cored and sliced
2 oounces cheddar cheese, cut into 1/4-inch cubes
1/2 cup toasted pecans
Apple Cider Vinaigrette:
1 TBSP finely chopped shallot
1 tsp dijon mustard
2 tsp honey
2 TBSP apple cider vinegar
1 TBSP water
6 TBSP neutral flavored oil
dash salt
pinch pepper
CONVERSION CALCULATOR
DIRECTIONS
Make the dressing by combining all the ingredients in a jar and shaking well.
In a large bowl combine the kale, apple, cheddar and about 3 TBSP of dressing. Toss to combine
Serve salad with extra dressing on the side.
