INGREDIENTS
2 pounds russet potatoes, peeled and cut into 1-inch pieces
salt & freshly ground black pepper
4 TBSP unsalted butter
2 medium garlic cloves, minced
3/4 cup whole milk
2 TBSP fresh lemon juice
1 tsp fresh lemon zest

DIRECTIONS
Place the potatoes into a large pot then cover completely with cold water (at least 2-inches above the potatoes) and stir in 1 tsp salt.
Bring to a boil over medium-high heat then cook the potatoes until tender, 10 to 15 minutes.
Drain the potatoes and set aside.
Add the butter and garlic to the now empty pot over medium-low heat until the butter has melted and the garlic is fragrant.
Add the milk to the pot with the butter and garlic and cook, stirring often, until the milk is warmed.
Take the pot off the heat and add the cooked potatoes into the pot then mash with a potato masher until well mashed.
Stir in the lemon juice, lemon zest, 1/2 tsp salt, and 1/4 tsp black pepper until well combined.
Taste and season with additional salt & pepper as needed.
