DIRECTIONS
Heat the oil in a cast-iron skillet over medium-high heat until the oil begin to shimmer. Spread the onion slices out evenly over the bottom of the pan and Sprinkle a little salt on top. Cook the onions for about 3 minutes without stirring. Reduce the heat to medium-low, stir the onions and continue to cook, stirring occasionally, for 10 minutes or until onions are well browned.
Turn the heat up to medium and add the butter and mushrooms to the pan with the onions, stir to combine. Sprinkle with the garlic powder and a dash of salt & pepper. Cook, stirring occasionally, until mushrooms are well browned, about 6 minutes. Transfer the mushrooms and onions to a plate and set aside.
Form the ground beef into 3 even sized patties roughly the same diameter of your hamburger buns. Generously season both sides of the patties with salt and pepper.
Heat the cast-iron skillet over medium heat. When the pan is hot lay the burgers in the pan and cook until well browned on one side about 3 minutes. Carefully flip the burgers and cook to desired doneness, 4 to 7 more minutes (4 more minutes for med-rare and 7 more minutes for well done).
Take the pan off the heat and top the burgers evenly with the mushrooms and onions. Lay 2 slices of cheese on top of each burger. Cover the pan for about 1 minute to allow the cheese to melt.
Transfer the burgers to the hamburger buns and add any additional toppings.
