INGREDIENTS
4 cups fresh pineapple cut in 1/2 inch pieces
1 large cucumber, sliced into half-circles
1 medium bell pepper, chopped
1 cup chopped red onion
2 TBSP freshly squeezed lemon juice
2 TBSP olive oil
2 TBSP freshly chopped cilantro
salt & pepper
CONVERSION CALCULATOR
DIRECTIONS
In a large bowl mix together the pineapple, cucumber, bell pepper, and onion.
In a separate bowl whisk together the lemon juice, olive oil, and cilantro.
Pour the lemon dressing over the salad and toss to combine.
Add salt and pepper to taste.
