INGREDIENTS

• 3 Persian cucumbers, sliced into rounds 1/4 inch thick
• 1/2 cup diced red onion
• 1 cup chopped tomatoes
• 1/4 cup chopped cilantro
• 1/2 red jalapeno, sliced
• 1/2 serrano pepper, sliced
• 1 TBSP cup lime juice
• 1 TBSP peanut oil
• 3 TBSP chopped peanuts
• 1 tsp kosher salt
• 1/4 tsp chili powder
• 1/4 tsp ground cumin
