INGREDIENTS

  • 1 TBSP olive oil
  • 8 ounces russet potatoes, grated
  • 1 yellow onion, grated
  • salt & pepper
  • 1 cup freshly grated Parmesan cheese



DIRECTIONS

  1. Heat the oil in a cast-iron pan over medium heat.
  2. When the oil is hot add the grated potato and onion. Sprinkle generously with salt & pepper and stir to combine.
  3. Cook, stirring occasionally, until potatoes and onion begin to brown, about 10 minutes.
  4. Stir in the Parmesan cheese until well combined. Form the mixture into a disk shape and cook until the bottom is browned, about 3 minutes.
  5. Flip onto a plate and serve.
