INGREDIENTS

  • 2 lb pork shoulder roast
  • 2 tsp Himalayan salt (or other sea salt)
  • 2 tsp liquid smoke
  • 12 tortillas
  • additional toppings of your choice: sliced avocado, sour cream, etc.
  • Spicy Pineapple Slaw:
  • 2 cups thinly sliced cabbage
  • 1 cup thinly sliced onion
  • 1 jalapeno, seeded stemmed and finely diced
  • 2 cups diced pineapple
  • 2 TBSP lime juice
  • 2 TBSP lemon juice
  • 1 TBSP olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup fresh chopped cilantro



DIRECTIONS

  1. Poke holes all over the pork using a fork, rub salt all over pork and place in the slow cooker. Drizzle pork with liquid smoke. Cover and cook on low for 16 to 18 hours flipping over halfway through.
  2. Add all the slaw ingredients in a large mixing bowl and toss to combine.
  3. Fill tortillas with pork, slaw and any of your favorite taco toppings.
