INGREDIENTS
2 1/2 cups all-purpose flour
4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 cups whole milk
1/3 cup fresh lemon juice
1 TBSP fresh lemon zest
2 TBSP unsalted butter, melted
2 large eggs
2 tsp pure vanilla extract

DIRECTIONS
Heat a griddle to 350°F.
In a large mixing bowl mix together the flour, baking powder, and baking soda until well combined.
Now stir in the milk, lemon juice, lemon zest, butter, eggs, and vanilla until everything is well mixed together.
Scoop the batter in roughly 1/4-cup portions onto the preheated griddle.
Allow the pancakes to cook for about 2 to 3 minutes, there should be several bubbles on top and the bottoms should be browned.
Use a spatula to flip the pancakes over and cook them on the other side, about 2 to 3 more minutes.
