INGREDIENTS

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup whole milk
  • 2/3 cup whole milk plain Greek yogurt
  • 2 large eggs
  • 1 cup fresh or frozen blueberries



DIRECTIONS

  1. In a large mixing bowl stir together the flour, baking powder, baking soda, and salt until well combined.
  2. Stir in the milk, yogurt, and eggs in with the flour mixture until well combined.
  3. Gently stir the blueberries into the mixture until combined.
  4. Heat a griddle to 350°F.
  5. Scoop the batter in roughly 1/4-cup portions onto the hot griddle.
  6. Once the pancakes have a couple bubbles on top (about 3 minutes) flip them over and cook on the other side, about 3 more minutes then transfer the pancakes to a plate and serve.
