INGREDIENTS

  • 12 ounces linguine pasta
  • 1 lime cut into wedges
  • SAUCE:
  • 4 TBSP soy sauce
  • 2 TBSP natural peanut butter
  • 3 garlic cloves, minced
  • 1 TBSP rice vinegar
  • 1 TBSP fresh lime juice
  • 1 TBSP raw honey
  • 1 tsp crushed red pepper flakes
  • STIR-FRY:
  • 1 TBSP peanut oil
  • 1 yellow onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 medium carrots, shredded
  • 2 large eggs, lightly beaten
  • 1 cup roughly chopped peanuts
  • 1 bunch freshly chopped cilantro leaves



DIRECTIONS

  1. Cook the linguine according to package directions then drain and set aside.
  2. In a small bowl mix together the SAUCE ingredients (soy sauce, peanut butter, garlic, vinegar, lime juice, honey, crushed red pepper) until well combined then set aside.
  3. Heat a wok or large pan over high heat.
  4. When the pan is hot drizzle in the oil then add the onion, bell pepper, and carrots then stir-fry for about 1 minute.
  5. Push the vegetables to one side of the wok then pour the beaten eggs on the other side of the pan. Scramble the eggs and cook until set, about 1 minute, then stir everything together.
  6. Stir in the linguine and sauce and stir-fry for about 1 more minute.
  7. Take the pan off the heat then stir in the peanuts and cilantro.
  8. Garnish with lime wedges and serve.
