Cook the linguine according to package directions then drain and set aside.
In a small bowl mix together the SAUCE ingredients (soy sauce, peanut butter, garlic, vinegar, lime juice, honey, crushed red pepper) until well combined then set aside.
Heat a wok or large pan over high heat.
When the pan is hot drizzle in the oil then add the onion, bell pepper, and carrots then stir-fry for about 1 minute.
Push the vegetables to one side of the wok then pour the beaten eggs on the other side of the pan. Scramble the eggs and cook until set, about 1 minute, then stir everything together.
Stir in the linguine and sauce and stir-fry for about 1 more minute.
Take the pan off the heat then stir in the peanuts and cilantro.
